Pasta e Ceci

Chickpeas simmered with rosemary, garlic and tomato paste, then short pasta cooked in the pot until the broth turns creamy. Mash some chickpeas for body.

The pasta cooks in the chickpea broth, so its starch does the thickening and the pot needs no cream. Mashing a third of the chickpeas before the pasta goes in is what makes the broth cling to it. Broken spaghetti settles and scorches, so keep the heat at a steady simmer and stir often. For the Roman version, melt 2 anchovy fillets into the oil with the garlic. The stew thickens as it sits, so stir in a splash of water if it gets too stiff before serving.

Cool, then refrigerate in a covered container. The pasta keeps soaking up broth, so reheat in a saucepan over medium heat with a splash of water, stirring until it simmers.
