Shepherd's Pie

Ground lamb, carrot and peas in a thyme and tomato gravy, baked under mashed potato. Rough the top with a fork so the ridges crisp.

Shepherd's pie is made with lamb; the same dish with ground beef is cottage pie, and the method does not change. The flour cooked into the lamb thickens the stock into a gravy that holds under the mash instead of soaking into it. The salt and pepper are split, half for the mash and half for the filling, so season both. Drain the potatoes well before mashing: a wet mash spreads thin and will not brown. You can assemble the pie ahead and bake it straight from the fridge; give it about 15 minutes longer, until the center is hot and the sauce bubbles at the edges.

Cool, then cover the dish or divide into containers and refrigerate. Freeze in portions and thaw in the fridge. Reheat covered in the oven at 180°C (160°C convection) until piping hot in the center, uncovering at the end so the top crisps again.
