Shrimp Summer Rolls

Shrimp, rice vermicelli, cucumber and herbs in rice paper, with a peanut and lime sauce. Dip the wrapper until just pliable, not soft, before you roll.

Rice paper keeps softening after it leaves the water, so take it out while it still feels a little stiff; it will be pliable by the time the filling is on it. Shrimp laid across the upper third of the wrapper end up under the last wrap, where they show through the paper. Keep finished rolls apart on the plate, as they stick and tear when they touch. The sauce uses peanut butter and soy sauce rather than hoisin; swap the soy sauce for tamari and check that the wrappers are rice and tapioca only to make the whole plate gluten-free.
