Chicken Tortilla Soup

Shredded chicken in a cumin and tomato broth, finished with lime juice and crisp corn tortilla strips. Fry the strips first and add them at the table.

Frying the tortilla strips in the pot before the onions seasons the oil and saves a pan. Poach the chicken breast whole at a gentle simmer; a hard boil makes it stringy. Shred it while it is still warm, when it pulls apart easily. Seed the jalapeño for a mild soup or leave the seeds in for more heat. Sliced avocado or a spoonful of sour cream on top works if you have them.
