Keema Matar with Roti
Ground lamb and green peas simmered with tomato and garam masala until the fat separates. Make the roti dough first so it rests while the keema cooks.
Keema matar is a north Indian dry curry of ground meat and peas, and the end point is visual: the fat pools at the edges of the skillet once the liquid has cooked off and the spices have fried into the meat. The lid comes off for the last stretch so that can happen, and the peas go in at the same time so they stay green and tender. The roti dough is only whole wheat flour and water; a short rest makes it easier to roll, and the rounds puff when the skillet is hot and dry.
