Chili con Carne

Ground beef and kidney beans simmered with cumin, chipotle and a little dark chocolate. Start the rice 25 minutes before the chili is done.

The depth comes from two things: leaving the beef undisturbed until it builds a dark crust, and chipotle chili powder, which is smoked jalapeño rather than a generic blend. The dark chocolate rounds the heat without tasting of chocolate; use a 70% bar and check the label if you need it dairy-free. The chili reheats well, so it suits a double batch with the rice cooked fresh.
